This pan roasted potato recipe is my go-to when I need something quick, crispy on the outside, fluffy on the inside, and packed with flavor. No fancy equipment needed - just a good pan, some heat, and our Gooder Than A Mug Greek Seasoning.

Pan-Roasted Potatoes Recipe

Ingredients

        •       4 medium red potatoes (or 2 large potatoes), cut into wedges

        •       2 cloves minced garlic

        •       Gooder Than A Mug Greek Seasoning (to taste)

        •       Salt & Pepper (to taste)

        •       2 tbsp extra virgin olive oil (divided)

Instructions

        1.      Wash and scrub the potatoes thoroughly. Cut them into wedges.

        2.     In a large mixing bowl, combine the potato wedges with minced garlic, salt, pepper, and Gooder Than A Mug Greek seasoning. Drizzle in 1 tablespoon of olive oil and mix well to ensure the potatoes are evenly coated.

        3.      In a large oven-safe skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Make sure the oil is hot before adding the potatoes.

        4.      Add the seasoned potato wedges to the hot skillet in a single layer. Sear for about 3–5 minutes, stirring occasionally to ensure they develop an even golden-brown crust on all sides.

        5.      Once the potatoes are evenly seared, transfer the skillet to a preheated oven at 400°F (200°C). Roast for 10–15 minutes, or until the potatoes are fork-tender and crispy on the outside.

        6.      Remove the skillet from the oven and let cool slightly. Taste and adjust seasoning if necessary. Serve hot as a delicious side dish!
